Vanilla Soy Whole Wheat Pancakes



With it being Sunday I wanted to make a good, healthy, yet simple and easy Breakfast for me and the family. Everyday this week I have been having a fresh smoothie for breakfast and it has been lovely however today I wanted something with just a bit more substance, ya know?

I took a basic whole wheat pancake recipe and changed it up a bit. Like adding soy vanilla flavored milk instead of regular milk {soy milk has more protein and is more packed with vitamins and nutrients} and used egg whites instead of regular eggs.



Ingredients

2 cups of whole wheat flour
4 tsp of baking powder
1/2 tsp sea salt
2 tsp cinnamon
1 tbsp Splenda no calorie sweetener
3 tbsp egg whites {3 tbsp = l large egg. I wanted my batter a little thick. If you want it a little less thick then add 3 more tbsp}
2 cups Vanilla Soy Milk
Cooking spray

Directions

Heat non-stick skillet over medium/low heat.

Mix all dry ingredients together then add wet ingredients.

Spray non-stick skillet with cooking spray.

Pour a little more then 1/4 cup of batter onto heated skillet.

Once batter starts to bubble, it's time to flip it over.

Serve with a side a of fresh fruit for a fantastic healthy and filling breakfast!

Servings: Makes 6 pancakes / 1 pancake each {their pretty large and thick}

When life gives you Lemons, make Lemonade... No for real

One of my new obsessions this Spring isn't the latest designer bag, or vintage-modern-retro-mod-flip flops... or... the latest and greatest 'Keep Calm' poster [in a different shade of pink of course]. Nope... this Spring my latest obsession is [drum roll] Lemonade! I bet judging by my title you couldn't guess could you?

Luckily our local grocer has had lemons on sale for the past 2 weeks, and although im not about to go all extreme coupon lady on their butts, I am going to buy quite a bit of lemons. Maybe the whole selection if im feeling a little greedy.


First you start out with the tools to complete the job. Some lemons, a pitcher, ice and a juicer [of course you can always substitute the juicer and use your fingers like I have been doing before I bought my nifty little juicer @ Target this weekend :) ]


About a cup of sweetener gets the sweet factor about right. I use splenda or raw sugar... but whatever works for you than just measure out about a cup and pour it in the pitcher [which should be a little less than halfway filled with ice].


Cut your lemon in half and place one end on the juicer... like so. I know, you needed an actual photo to see how it's done. It's alright, im a visual type person to.


My little juicer holds half a cup however we will need a full cup of lemon juice for this bath of lemonade.


Once you have your juice, pour it in the pitcher of ice and sweetener/sugar.


After filling the rest of the pitcher with water you are left with some delicious lemonade. Fresh and very refreshing.


...and frothy [that word make me giggle].


HOMEMADE LEMONADE

  • 5 Lemons
  • 1 cup of sweetener/sugar
  • Pitcher, ice, juicer and water
1. Fill your pitcher with a little less than half of ice.

2. Pour in 1 cup of sweetener/sugar and set aside.

3. Juice 5 lemons until you get 1 cup of lemon juice. Pour into the pitcher.

4. Fill the pitcher with water [about 2 inches from the top]. Stir and enjoy!!

Boo-Yah Granny

I had bought some fairly large Gala apples that were on sale at Publix sometime last week, with the good intentions of making a really over-the-top Apple Pie. Why over the top? Because this was my first pie for the 'season' [as in Autumn/Holiday season].

I have almost purposely ate very, very little today just for the simple fact, I was saving room for a large scrumptious, juice piece of hot apple pie with some cool-whip.

And oh boy, was it good!


Ingredients-
  • Prepared Pie Crust [I used Publix prepared pie crust in the refrigerated section. It was on sale ha!]
  • 7 Gala Apples 
  • Cinnamon
  • Nutmeg
  • All Spice
  • Brown Sugar
  • Water
  • 1/2 Cup of Butter
  • 3Tbsp Flour
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Water

You will notice in the first section of ingredients that I have no specific measurements. Reason being is because this is 'to taste'. Put as much or as little as you want of each of those spices, to reflect your own specific tastes.

1. Preheat oven to 425 Degree's.

2. Wash, Peel and slice apples long ways and than down the center.

3. Add all of the spices and sugar from the first part of the ingredients. The water is to help get the apples a bit wet so they will soak in the spices and juices.

4. Next melt your 1/2 Cup of butter in a medium sauce pan. Then add the next 4 ingredients. This is the glaze that will be poured over the top of the apples.


When it's all mixed up and melted it should look 'glazy' and it will equal out to be about a cup.


Put the sliced/spiced [haha] apples in your pie plate which would already be lined with your bottom part of your prepared pie crust. Next pour the sugary glaze over the top of the apples. Try to get it evenly throughout.


Place the top part of your prepared pie crust on top and secure the edges around the pie plate, to the bottom part of the crust. Put about 6-7 slits throughout the top part of the crust.

Bake at 425 degree's for 15 minutes. Than turn the oven down to 350 degrees and bake for 38mins.


Once done, your pie should be a nice golden brown. It should look so golden that you will almost feel the urge to grab the pie right out of the oven without any protective mitts and smash your face into it to scoff up all of those sugary juices.


Let your pie cool for about 30mins. Add some cool-whip and Viola! Instant yumminess. You will for sure enjoy every single bite of this scrumptious pie.
